Old Fashioned Strawberry Shortcake

and fun to make that your kids would love to help? This strawberry shortcake recipe is a sure winner with parents and kids alike.
Ingredients:
- 1 1/2 C. All purpose Flour
- 1/2 C. Whole Wheat Flour
- 2 tsp Baking Powder
- 1/2 tsp salt
- 1/4 C. sugar
- 2/3 C. Milk (or unsweetened soy milk)
- Strawberries (or frozen mixed fruit)
- Some extra sugar (use sparingly)
- Whipped topping of choice
Directions
- Preheat the oven to 415 degrees.
- Mix the dry ingredients (first 5 on the list). In a large bowl
- In a separate bowl mix the milk and oil together so that they are combined and not separated.
- Use a fork to gently add the liquid mixture to your dry ingredients. Be careful not to over-mix.
- Place batter in round biscuit shapes on a cookie sheet. (You should end up with about 10 large biscuits)
- Bake for about 20 minutes.
- While the biscuits are baking, cut up your strawberries.
- As you cut them, mix them with a little sugar in a bowl, then let them sit in the fridge for a few minutes. This will bring out their juices.
- When your biscuits are cooled and your fruit is chilled, build your shortcake by breaking the biscuit up into a bowl, adding fruit and topping with a little whipped topping. - YUM!
